LEMON AND GARLIC SPAGHETTI WITH PANGRATTATO AND ROASTED THYME TOMATOES

IngredientsRoasted tomatoes8 backcountry tomatoes1 punnet babyish capsicums, cut into quarters½ ball garlic2 sprigs of thyme
Spaghetti200g vegan spaghetti (e.g. Ceres or San Remo beating pasta)
Pangrattato2 Tbsp chopped walnuts1 Tbsp olive oil 50g panko breadcrumbs1 Tbsp chopped thyme leaves
Auto garlic sauce2 Tbsp DF butter 1 shallot, cautiously diced2 cloves garlic, agilely slicedZest & abstract of ½ lemonPinch of chilli flakes
To serve100g rocket leaves2 Tbsp balsamic covering (e.g. Culley’s)
MethodPreheat oven to 220C. Bring a pot of absolute baptize to the boil.
Prep & buzz tomatoes: Place tomatoes, capsicums, garlic ball and thyme on a lined oven tray with a dribble of olive oil. Season able-bodied and buzz for about 15 minutes, until veges and garlic are tender.
