Steps to make Lemon Pickle/ Achaar:

  1. Wash lemons well and steam it for 5-10 minutes in a vessel so,the juices released can be collected and used later.once cold,remove from steam and slice each into 4 quarters..
  2. Heat a pan,add oil,once hot add mustard seeds,when mustard seeds start to splutter add dry chilli and curry leaves.Add finely chopped green chilli s and sauté well..
  3. Add turmeric,chilli powder,asafoetida and fenugreek powder and sauté on Low heat till it turns aromatic..
  4. Add water and stir well,add required salt too.and bring to boil on Low heat..
  5. Boil for two to three minutes,and now add the sliced lemon along with juice that was released during steaming.boil for 2-3 minutes.Remove from stove and allow to cool. check the taste. If the spiciness is not adequate,always heat a pan,and roast chilli powder and cool the same before adding to the mix..
  6. Transfer to previously sterilised and well dried glass bottles.You can keep in fridge and use it for rice…
