  4. Add garlic & chilli & cook until fragrant & soft, stirring frequently, keep on low heat. Don't let it burn..
  5. Add mackerel, paprika, sliced tomato if using, sugar, black pepper, salt if using & balsamic vinegar- gently stir, trying to keep mackerel pieces visible but this is not essential, I just like it like that, cover with a lid. Cook 5 minutes.
  6. Remove lid carefully, let the condensation in the lid drip back into the pan, stir, recover, cook another 5 minutes & again remove the lid & let the condensation drip back into the pan..
  7. If you find it is too dry add a teaspoon of hot water & stir..
  8. I served it with little homemade bread rolls. Can also be served with crackers topped with thinly sliced cucumber. Flatbread, roti, tortilla, pitta bread etc- choice is yours. I have also served this stirred into Spirali Pasta with freshly grated parmesan..
